The pine nut kernels are very white and nutritious and have a large oil content (nearly 50%), so like other nuts need to be stored carefully in the refrigerator or freezer. They can be eaten raw or roasted and are often included in other food preparations to complement the meal. Pesto is a famous Italian pasta accompaniment made from sliced pine nuts with basil and parmesan cheese.
Pine nuts or pinons are produced in the seed-bearing cone of conifers from the Pinus species of plants.
Pine nuts are high in calories, carbohydrates and protein and also contain calcium, phosphorous, iron, vitamin A, and vitamins B1, B2, B3.
